Horseradish-crusted Wild Virginia Rockfish
Ingredients
- 1/3 cup mayonnaise
- 2 tablespoons horseradish
- 1 tablespoon bread crumbs
- 1/2 teaspoon minced garlic
- 1 anchovy fillet ( optional)
- 1 pinch white pepper
- 4 rockfish fillets (6 ounces each)
- flour to coat
Instructions
Blend mayonnaise, horseradish, bread crumbs, garlic, anchovy and pepper in food processor. Dredge rockfish in flour then coat with horseradish mixture. Bake in 350 degree oven for 9 to 12 minutes until fish flakes easily with a fork.
